Homemade granola is so easy to make and dare I say, tastes better than store bought?! These Granola Clusters are naturally sweetened by the banana and also by maple syrup. These clusters stay together and have a delicious taste from the almond butter. In my other granola recipes they're less cluster like so I'm super excited about these!
No Oil Granola Clusters
Instead of using oil in this recipe, I wanted to use other binding agents. So, to start you're going to want to mix together a ripe banana (this also adds a sweetness), almond butter (or your nut butter of choice), and the maple syrup. Then, you'll add the flax, chia and hemp seeds and let it sit for 10 minutes so it's incorporated.
This will allow a stickiness to form and the ability for all of the oats and mix-ins to bind and form clusters. It also allows for no oil to be used in this recipe. Don't get me wrong, oil is great in moderation, but if you don't need to use it, may as well forgo it!
Mix-Ins
The mix-ins are the fun part! You get to customize what you want to have in your granola clusters. Choose whatever nuts and seeds are calling your name. If you're adding dried fruit (I added golden raisins and goji berries), make sure to add them in AFTER you've baked them.
Speaking of baking, it's important to bake the clusters, flipping but not flipping too much (or they won't be as clustery) ½ way through. Then you need to let them cool and harden, this will allow them to fully form their clusters!
Storage of Granola Clusters
I like to store ½ of the batch in an airtight container for the week to have on top of yogurt or use in other recipes. Then, I store the other ½ in a ziplock bag in the freezer and it will last for 2 months or so.
Granola Clusters
Ingredients
- 1 ripe banana
- ¼ cup almond butter
- ¼ cup maple syrup
- 2 tablespoon flax seed
- 2 tablespoon chia seed
- 2 tablespoon hemp seed
- 2 cups of rolled oats
- 2 teaspoon vanilla
- 3 teaspoon cinnamon
- ½ teaspoon salt
- 1 ½ cups nuts/seeds almonds, walnuts, pecans, pumpkin seeds, up to you!
- ½ cup dried fruit goji berries, golden raisins
Instructions
- Preheat the oven to 300F.
- Mix the banana, almond butter, maple syrup, flax, chia, and hemp seeds and let sit for 10 minutes.
- Mix the rest of the ingredients together except for the dried fruit.
- Spread the granola mixture on a sprayed/lined baking tray and bake for 40 minutes, flipping half way through.
- Let the granola cool for 30-45 minutes. This will allow it to crisp up! Then top with the fruit and enjoy within a week
- Store in an airtight container!
