Ingredients
- 2 medium very ripe bananas
- 1 cup oat flour or other gluten free flour
- ¾ cup rolled oats
- 1 teaspoon baking soda
- ½ teaspoon baking powder
- 1 pinch sea salt
- 2 tablespoon flaxseed
- 3 tablespoon chia seeds
- 1 teaspoon vanilla extract
- 2 tablespoon almond butter can use sunbutter if nut free
- 2 tablespoon maple syrup
- 1 ½ tablespoon extra virgin olive oil
- ½ cup chocolate chips
Instructions
- In a large bowl, mash the banana then stir the rest of the ingredients except for the chocolate chips. Stir until combined then fold in the chocolate chips.
- Cover the mixture and refrigerate for 20 minutes while preheating the oven to 375F (190 C).
- Use a tablespoon or equivalent to scoop the mixture into small cookies on a baking sheet.
- Bake for 10-11 minutes, you don’t want them too brown to ensure they stay moist.
- They store for a few days on the counter and 5 days in the fridge.
