Hey there!! One of my favorite directors is Wes Anderson. When I was rewatching The Grand Budapest Hotel, I was inspired by all of the bakery scenes to create my own Vegan Marbled Banana Bread. So, I filmed a video for this loaf inspired by Wes Anderson (check it out below). This marbled banana bread provides beauty in the asymmetry of the swirls. It also has a delicious taste from both the chocolate and OG batters. 🍌🍫

Marbled Banana Bread
Ingredients
- ⅓ cup almond milk
- 1 tablespoon apple cider vinegar
- 4 mashed bananas suppppper ripe
- ½ cup pure maple syrup
- 2 tablespoon ground flax seeds
- 2-3 tablespoon almond butter
- 1 teaspoon pure vanilla extract
- 1 cup whole wheat flour
- ½ cup white flour can do all wheat or all white if preferred, can also sub all for oat flour
- 2 teaspoon cinnamon
- 1 teaspoon baking soda
- ¾ teaspoon baking powder
- ½ teaspoon sea salt
- ½ cup chocolate chips
- ¼ cup cocoa powder
Instructions
- Preheat the oven to 350F
- Combine milk and apple cider vinegar and let it sit for 2 minutes. Meanwhile, mash your bananas and combine with all other wet ingredients.
- Add your milk mixture and ground flax seeds then mix. Add your dry ingredients and mix until combined. Add your chocolate chips then pour ½ of the batter into another bowl. -With ½ of the batter, add the ¼ cup of cocoa powder.
- Using 2 ¼ cup measuring cups, alternate pouring a chocolate and regular ¼ cup scoopinto a parchment paper/greased bread pan until you're out of dough.
- Take a toothpick or skewer and lightly combine the top layers so they swirl
- Bake for 50-60 minutes then let it cool for 30 minutes before enjoying!
