Moroccan Chickpea Tomato Stew
Ingredients
- 1 15 oz can chickpeas
- 3 garlic cloves
- 1 yellow onion
- 2 tablespoon extra-virgin olive oil
- 1 15 oz can diced tomato
- ¾ teaspoon ground cinnamon
- ¾ teaspoon cumin
- ¾ teaspoon ginger
- 1 ½ cup vegetable stock
Instructions
- Chop your onion and mince your garlic then put in a saucepan with your oil
- Stir for a few minutes until fragrant.
- Pour the rest of your ingredients into the saucepan, stir, then cover. Cook on medium heat for 25 minutes stirring once or twice
- After 25 minutes, most of the liquid will be absorbed and you’re left with a flavorful dish, enjoy!
