Let's take a trip down memory lane to those childhood Halloweens, where after hours of trick or treating you'd gather all of your candy and trade with your friends. On the top of my list to get were Reese's Peanut Butter Cups. There's something special about the combo of peanut butter and chocolate. I always crave it, but now, as a more health-conscious adult, I've created something that'll take you right back to those peanut butter cups, minus the stomach ache after: my 3-ingredient Date Ball Snack!
Healthier Nod to Peanut Butter Cups
These little bites of joy are my healthier nod to those beloved peanut butter cups. They capture that nostalgia without the added sugars or the long list of ingredients. They're seriously irresistible, naturally vegan, and guess what? They're sweetened with dates – nature's candy! Dates are not just deliciously sweet; they're a powerhouse of nutrition! They offer fiber, essential minerals like potassium and magnesium, and they're a great natural substitute for sugar.
The beauty of this recipe lies in its simplicity. Just three ingredients and you've got a snack that's fast, healthy, and will crave your sweet tooth. These Date Balls are the perfect answer to those sweet cravings, without any of the processed stuff. They're chewy, they're nutty, and they're everything you want in a healthy treat. Trust me, once you try these, you'll be making them on repeat! Every time I make these for parties, people ask for the recipe- so to all of you that have tried these, here's the recipe!! Date Balls
Ingredients
- 1 cup peanut butter
- 1 cup dates soaked
- ½- 1 cup chocolate/chocolate chips
Instructions
- Pit the dates and soak them in warm water for 10 minutes so they soften
- In a food processor, process the dates and peanut butter until they are combined and a smooth texture.
- Roll them into balls with your hands, place them on a lined baking sheet (parchment paper) and stick them in the freezer for 10 minutes
- Heat up the chocolate chips (no need to add coconut oil or anything, the chocolate chips as in will be perfect!) in a bowl and dip each one of the dates until they are coated
- Stick the date balls back in the freezer (or put them in the fridge) until the chocolate has solidified (at least 10 minutes in the freezer) and enjoy!
- Store in the fridge for up to 2 weeks (I’d be surprised if they last that long, enjoy!)
