These Snickies are my new favorite meal prep treat! This date snickers treat has dates with a glob of "cookie dough" (almond butter and chopped peanuts with oats) that you freeze then coat in chocolate and top with sea salt flakes. Does it get any better?! It's also refined sugar-free, vegan, and gluten-free: what a win win win!
I'm calling them "Snickies" because it's an adorable bite sized healthier for you Snickers where there's chocolate, peanuts, and the dates are like caramel. I hope you enjoy (it would be hard not to!)!
Dates- Nature's Candy!
These treats are refined sugar-free and have a base of dates – nature's candy! Dates are not just deliciously sweet; they're a powerhouse of nutrition! They offer fiber, essential minerals like potassium and magnesium, and they're a great natural substitute for sugar.
Almond Butter "Cookie Dough"
The middle layer of these Snickies is a "cookie dough" mixture with peanuts. I can't call it cookie dough, because it's mostly almond butter. BUT, it has a similar consistency and is more fun if we can call it cookie dough.
It consists of almond butter, oat flour, maple syrup, vanilla, and then some peanuts. The peanuts add a crunch that balances the caramel like texture of the dates and the hardness of the melted chocolate with a nutty note.
Storage of Your Date Snickers Treat
This recipes makes about 20 snickies, I doubt you'll need to store them for a while. If you do, they can be stored in the fridge for up to 1 week. You can also store them in the freezer for up to 4 weeks, in an airtight container. I personally prefer to eat mine out of the freezer, but I do love one out of the fridge every now and then.
Snickies! (Date Snickers Treat)
Ingredients
- 10 pitted dates halved
- ½ cup almond butter runny
- 1 ½ tablespoon oat flour
- 1 tablespoon maple syrup
- 1 teaspoon vanilla
- ¼ cup peanuts slightly chopped
- 3 tablespoon chocolate chips
- 1 ½ teaspoon coconut oil
- Sea salt flakes to top
Instructions
- De pit your dates and tear them in ½. Place them on a plate lined with parchment or wax paper.
- Make the “cookie dough” by combining your runny almond butter, oat flour, maple syrup, vanilla, salt, and slightly chopped peanuts in a bowl.
- Put some cookie dough mixture on top of each date half then put them in the freezer for 5-10 minutes to set.
- In a small bowl, put your chocolate chips and coconut oil and microwave for 30-60 seconds until melted.
- Take your dates out of the freezer. Then, top your dates with the cookie dough mixture with melted chocolate and stick them back in the freezer for 20-40 minutes to harden.
- Sprinkle with sea salt and enjoy!
- Storage: I love to eat these both from the fridge and freezer. They keep for up to 7 days in the fridge and 4 weeks in the freezer in an airtight container.
