Sweet Potato Boats
Ingredients
- 1 large sweet potato
- avocado oil spray or avocado oil
Toppings for Avocado Boat
- ½ avocado
- Squeeze of lemon juice
- Dash of red peppers
- Salt pepper
Toppings for Almond Butter Apple Boat
- ⅓ apple
- 1-2 tablespoon almond butter
- 1-2 tablespoon pumpkin seeds
- 1-2 teaspoon golden raisins
- Dash of cinnamon
Toppings for Cucumber Yogurt Boat
- 1-2 tablespoon non-dairy greek yogurt
- 5-7 thin slices of cucumber
- 1-2 teaspoon fresh dill chopped
Instructions
- Preheat your oven to 400F.
- Wash your sweet potato and cut into ¼-1/3 inch strips (this is tricky so be careful!)
- Place your slices on a baking sheet and spray with a bit of avocado oil
- Put them in the oven for 30 minutes. Meanwhile, prep your toppings
- Depending on how thick your slices are, your potatoes should be done after 30 minutes. They should be cooked through and slightly toasted.
- Allow them to cool for a few minutes then put whatever toppings you'd like on your potato boats!
- Storage: you can store them in the fridge for up to 3 days
