You guys! This dessert is SO easy to make. You're definitely going to want to double or triple the recipe (but I do love a fun single serve sometimes, which is exactly what I needed the day I made this).
Silken Tofu, Inside of Vegan Chocolate Mousse??
Before you knock this recipe for having tofu as the main ingredient, hear me out! You can't even taste it.
Silken tofu adds protein to this dessert and more importantly, gives this mousse the mousse like consistency and texture. It's an ingredient that magically transforms the texture into something luxuriously creamy.
Not to mention, you'll feel better after eating this chocolate mousse vs. other mousses that have heavy cream or a lot of dairy as the base.
The Benefits of Dark Chocolate
Dark chocolate has many nutritional benefits. Dark chocolate boosts the immune system and improves nerve and muscle function due to the iron, zinc, magnesium, manganese, and selenium found in it. It is also high in antioxidants and anti-inflammatory nutrients.
The strawberries on top not only pair beautifully with the chocolate, they also are high in vitamin C, which can help boost your immune system.
Single Serve
Sometimes you're just in a mood to have 1 dessert for yourself and not have extras. That's why I developed this single serve recipe. However, it can very easily be doubled, tripled, and even multiplied by 6 if you're having a dinner party! I wanted to give the option for you to indulge solo into this decadent and creamy mousse while easily having the ability to multiply to share with others as well. I hope you enjoy!
Vegan Chocolate Mousse
Ingredients
- 2 tablespoon dark chocolate chips melted (or 25 grams of a chocolate bar)
- ½ cup silken tofu
- 1-2 teaspoon maple syrup depending on how sweet you'd like it
Instructions
- Melt your dark chocolate then add to a blender with your silken tofu and maple syrup.
- Blend until combined then pour into a glass and let it set in the fridge for 2 hours. Top with berries and enjoy!
- Feel free to double/triple the recipe to make for others as well (or yourself for later!)
