Refined sugar is essentially sugar that has been processed to remove the molasses, resulting in a finer grain. It's everywhere in our diets, from sodas to store-bought desserts. But fear not, my sweet-toothed friends, there are alternatives like maple syrup and coconut sugar that are refined sugar free. These natural sweeteners not only provide a rich depth of flavor but also retain some nutritional benefits, making them a fantastic choice for our brownie cups.
The Flavor and Taste of Nutty Gooey Brownie Pie Cups
The magic of these brownie pie cups doesn't end with just being refined sugar-free. Imagine biting into the nutty crunch of pecans, balanced with a sprinkle of flaky sea salt that dances on your palate. The center? A dollop of coconut yogurt, adding a creamy dreaminess that complements the dense, gooey brownie base. It's a symphony of flavors and textures that come together in perfect harmony.

Gooey Brownie Pie Cups
Ingredients
- 1 ½ cups almond flour
- ¼ cup cocoa powder
- 1 teaspoon baking soda
- ½ teaspoon salt
- 1 tablespoon apple cider vinegar
- ⅓ cup agave/ honey
- 1 teaspoon vanilla extract
- ⅓ cup oil I used olive oil
- Nuts of choice to top I used pecans + salt
- 1 cup water
Frosting/Gooey Center
- ⅓ cup non-dairy yogurt
- ¼ cup cocoa powder
- 2 tablespoons maple syrup
Instructions
- Preheat the oven to 180C/350F. Spray muffin tray with avocado oil/line with baking cups
- In a large mixing bowl, add your dry ingredients then add the wet ingredients and mix until a smooth batter remains.
- Transfer to the muffin tray and bake for 15-17 minutes, they will still be a bit gooey on the inside.
- Meanwhile, make the frosting by combining the non-dairy yogurt, cocoa powder, and maple syrup for sweetness.
- Once the “gooey pies” have been out of the oven for 3-5 minutes, put the frosting mixture inside and spread. Top with pecans and salt. Best enjoyed while warm for maximum gooey-ness
- Store in the fridge for 5-8 days!
