Banana bread has long reigned as the ultimate comfort breakfast, weaving together the simplicity of ingredients and the heartwarming joy of homemade baking. But imagine starting your day, or even closing it, with a slice of Double Chocolate Vegan Banana Bread! It's not just soul-satisfying but also kind to your body and the planet. This recipe isn't just a treat; it's a week-long breakfast solution. It's perfect for meal prep, ensuring you wake up to decadence every morning without a hint of breakfast boredom in sight. It's even better with a side of seasonal fruit!
Choosing the Right Banana
Crafting this chocoholic's dream begins with the choice of bananas. Go for the super ripe ones, their skins speckled with black, promising natural sweetness and a perfect moist texture to the bread. These bananas minimize the need for added sweeteners, allowing just a hint of maple syrup to elevate the richness without relying on refined sugars.
How is it Vegan?
This banana bread is a testament to the beauty of vegan baking, showcasing how flaxseed acts as an excellent egg substitute, binding the ingredients with its natural gelatinous quality when mixed with water.
The secret to its tender crumb lies in the vegan buttermilk. It's easily made by combining almond milk with apple cider vinegar and letting it sit for about 10 minutes. This simple step introduces a light tanginess while ensuring the bread rises to fluffy perfection.
Chocoholic's Dream
And let's not forget the double dose of chocolate! Cocoa powder and vegan chocolate chips meld into the batter, creating a loaf so indulgent it blurs the lines between breakfast and dessert. Also, the sprinkle of chocolate chips on top ensures each bite is coated in chocolate! Each slice is irresistibly moist, richly flavored, and satisfyingly fluffy. It's hard to believe it's entirely vegan and refined sugar-free.
I also find that chocolate and fruit make the perfect pairing. In the winter I love a sumo orange on the side. And in the summer, it's best with strawberries or raspberries. I hope you enjoy!
